| Ceviche with Large Scallops and Lobster Oil |

| Ingredients: |
- 12 large scallops
- Juice of one lime
- Juice of one lemon
- 2 tablespoons olive oil
- 1 tablespoon Village Bay Lobster Oil
- 2 tablespoons fresh chopped basil
- 1 tablespoon pink berries
- 1 tablespoon chopped smooth parsley
- 1 tablespoon chopped chive
- A few leaves arugula or young spinach or a mixture of both
- Salt and milled pepper
- Guacamole

| Preparation: |
- Slice scallops in 2 or 3 slices lengthwise.
- Beat olive oil and lobster oil with lemon and lime juice.
- Add chopped herbs and pink berries.
- Place scallop slices in oil and juice preparation, salt and pepper to taste.
- Prepare a bed of greens in each plate, place marinated scallop slices on top and cover with sauce.
- Present guacamole in a separate dish or directly in plates.
This preparation may also be served as a sandwich with two slices toasted bread.
