Ceviche with Large Scallops and Lobster Oil
Ingredients:
  • 12 large scallops
  • Juice of one lime 
  • Juice of one lemon
  • 2 tablespoons olive oil
  • 1 tablespoon Village Bay Lobster Oil 
  • 2 tablespoons fresh chopped basil
  • 1 tablespoon pink berries
  • 1 tablespoon chopped smooth parsley
  • 1 tablespoon chopped chive
  • A few leaves arugula or young spinach or a mixture of both
  • Salt and milled pepper
  • Guacamole
Preparation:
  1. Slice scallops in 2 or 3 slices lengthwise.
  2. Beat olive oil and lobster oil with lemon and lime juice.
  3. Add chopped herbs and pink berries.
  4. Place scallop slices in oil and juice preparation, salt and pepper to taste.
  5. Prepare a bed of greens in each plate, place marinated scallop slices on top and cover with sauce.
  6. Present guacamole in a separate dish or directly in plates.

 

This preparation may also be served as a sandwich with two slices toasted bread.
